With the sugaring-off season just around the corner, we bring you a recipe inspired by maple syrup: Pecan Pie Overnight Oats. If you've had a pecan pie before, you know it's purely pecans, maple syrup and pie crust. Sound good? Keep reading ;)
Maple sugar is made by boiling the sap of the maple water longer than is needed to create maple syrup or maple taffy, until almost all the water has been boiled off and a solid sugar is left. Unlike refined sugars, maple sugar contains vitamins and minerals including zinc and manganese and is packed with antioxidants. While it's still considered a sugar, it's definitely a healthier alternative.
Mix 1/3 cup of almond milk with one packet of Yumi Maple Cranberry Overnight Oats, vanilla, nutmeg, kosher salt and refrigerate overnight or for 4 hours. Before serving, add 1 tsp maple syrup and 2 tbsp chopped pecans.
