During this period of social distancing and quarantine, many of us miss the luxury of dining out. Personally, I especially crave weekend brunches with freshly-made waffles. Luckily, healthy recipe creator @healthynre came up with a delicious healthy waffle recipe so I can get my fix.

Healthy Blueberry Oatmeal Waffles
ingredients
- 1 packet Blueberry Vanilla Overnight Oats
- ½ cup rolled oats
- 2 tbsp whole wheat or gluten-free flour
- 1 tsp baking powder
- A pinch of sea salt
- 2 ripe bananas
- ¾ cup unsweetened apple sauce (non-dairy) or 2 large eggs
- 1 tsp vanilla extract
- 2 tbsp melted coconut oil
instructions
- Preheat your waffle iron and lightly brush the surface with some melted coconut oil.
- Combine the dry ingredients in a large mixing bowl, and the wet ingredients in another.
- Add the wet mixture into the dry mixture until it’s well incorporated.
- Pour the batter into the prepared waffle iron and cook until golden brown (should be around 12 minutes).
- Carefully remove the waffles from the iron and let cool for 5 minutes before serving with your favourite toppings (fresh fruits, peanut butter, honey, maple syrup and/or yogurt).
