What if I told you can eat your pancakes, and have them be healthy too? We love this pancake recipe by @localplanteater, who creates simple, delicious, plant-based recipes that only use whole, real ingredients.

Healthy Vegan Oatmeal Pancakes
ingredients
- 1 packet Blueberry Vanilla Overnight Oats (or substitute with 1/3 cup oat flour)
- 2/3 cups oat flour (see instruction on how to make your own oat flour below)
- 1 ripe banana, mashed
- 1/2 cup plant based milk or water
- 1 tsp baking powder
- 1 1/2 tsp cinnamon
- 1/4 tsp salt
instructions
- Whisk your ingredients together in a large mixing bowl.
- Heat pan with coconut oil.
- Add batter to the pan. Once it starts to bubble, it's time to flip the pancakes.
- Once both sides are golden brown, remove from pan.
- Serve with the toppings of your choice. @localplanteater tops hers with coconut yogurt and frozen blueberries (which were heated-up on low heat a sauce pan, until thawed and some of the juices extracted), cacao nibs & fresh strawberries.

Making your own oat flour
Oat flour is a great alternative to regular flour if you're trying to increase your fibre intake, or want an easy gluten-free alternative to regular flour. Keep in mind that the total volume will decrease, so if you need 1 cup of oat flour, you'll need to grind a bit more than 1 cup of rolled oats.

- Add rolled oats to a blender
- Grind into a fine powder
- Store in an airtight container
