Pumpkin Spice Up Your Overnight Oats For October!

I love fall. The changing colors, the sound of dried leaves crunching as you walk, and, of course, pumpkin everything. What better way to kick start Fall than by eating pumpkin spice goodies? I spend the rest of the year longing for this flavor and it really sets me in Autumn!

We all like a pumpkin spice latte or three, but you can also transform your regular oatmeal breakfast into a Fall treat while keeping it super healthy. The best part is that it takes less than 5 minutes to make it! Faster than your Starbucks barista ;)

All you need is:

Ingredients:

  • 1/4 cup pure pumpkin puree
  • 1/3 cup milk
  • 1 teaspoon maple syrup
  • 1/4 teaspoon pumpkin pie spice
  • 1/8 teaspoon pure vanilla extract
  • Pinch Kosher salt
  • 1 pack Yumi apple cinnamon oats or 1/3 cups old-fashioned rolled oats
  • Optional: pumpkin seeds, walnuts, dried cranberries.

 

To make the Pumpkin Spice Overnight Oats simply follow these 3 steps:

  1. Combine the oats, milk, pumpkin puree, pumpkin spice, salt and vanilla into a jar and refrigerate overnight.
  2. The next morning, add maple syrup and stir
  3. Optional: garnish with the toppings of your choice!

For this recipe, you can use regular oats or you can use our Yumi apple cinnamon oats. Our apple-cinnamon oats have dried apples, currants and cinnamon which are a great match with pumpkin flavors. If you opt for regular oats, we suggest adding a dash of cinnamon.

To make your oats even more delicious and healthy, we recommend topping your overnight oats with any of the following toppings:

  • Pumpkin seeds
  • Walnuts
  • Pecan
  • Dried cranberry
  • Ground Cinnamon
  • Dates
  • Dried raisins
  • Apple chunks
